Watch one

Two groups cooked the same chicken thighs in the same pan on the same burner. One pan browned. One came out gray. Why?

  1. Group A: six thighs, space between them.
  2. Group B: twelve thighs, edge to edge.
  3. Chicken is mostly water. Heat drives it out.
  4. In group A the steam escaped. The surface dried.
  5. In group B it was trapped. The surface stayed wet.
  6. A wet surface holds at about 212 °F (100 °C).
  7. Browning needs hotter than that. Group B could not get there, so it steamed. ✓
